Hi Fam,
We were in the mood to eat some fresh, spring like food, and since we had a bunch of tortillas to finish up, we decided to quickly come up with our own version of Fajitas.
The sauce that I used as a base was pretty simple:
-Radishes
-Walnuts
-Green Chilis
-Salt
-Yogurt
You can measure according to how much quantity you want to make, and make sure you add in the yogurt after the radishes, walnuts, salt, and green chilis are blended together. The consistency should not be watery, as you want the sauce to spread easily and stay put on the tortilla.
Next, I chopped up some bell peppers, and added some kale and sautéed everything together very lightly! I also cut up some cucumbers, and cilantro for added veggies to add in.
Instead of beans, we chose Paneer as a protein. To prepare the paneer you will need:
-1 tablespoon of chickpea flour, and roast this in a pan first
-In another bowl, add in about 1/2 a cup of thick yogurt and add salt, chili powder, turmeric, dhania/jeera powder. This is where you add in the chickpea flower and thoroughly mix.
Lastly, add the paneer pieces that you’ve chopped up (1/2 block) into it and marinate it all for 20 minutes.
Next, take a pan, and pan fry the paneer pieces with a little oil and voila!
Now, just assemble your ingredients in the manner that you’d like on your tortilla of choice and then enjoy! I also ended up adding a little bit of avocado at the end, and enchilada sauce (as this is the only hot sauce I had on hand).
This recipe, makes enough for 4 people, so just tweak it to how many folks you’re trying to make it for!
